Hello to all my fellow runDisney runners! My name is Jamie Lee and I am a Disney-loving Dietitian and mom of two runners-in-training. Keeping myself and my family well-fueled for family run Disney events is among my top priorities. Good nutrition supports a healthy immune system, athletic performance, energy levels, and proper growth in my little ones. Chocolate Chip (and Dale) Applesauce Muffins are the perfect race-day snack. Carbohydrates are the preferred source of energy for all bodies, especially kids and their growing muscles! The best sources of carbohydrates come with vitamins, minerals and fiber, like whole grains, fruits and vegetables. This recipe has it all with just the right amount of sweet. Applesauce is great to use in baked good recipes because it adds sweet flavor and moisture.

Chocolate Chip (and Dale) Applesauce Muffins

Makes 12 muffins

Ingredients

Directions

  1. Preheat oven to 400 F
  2. Whisk all dry ingredients together in a bowl, except chocolate chips
  3. In a separate bowl, mix all wet ingredients together
  4. Fold wet ingredients into dry ingredients just until the mixture is moist
  5. Fold in chocolate chips last
  6. Divide batter evenly into 12 lined muffin tins and bake for 13-15 minutes or until a toothpick inserted into the center of comes out clean
  7. Allow to cool for several minutes before serving

Serve with eggs and fruit as part of a complete breakfast, or with 2 Tbsp of nut butter as a snack! Store in an air-tight container for 3-5 days in the refrigerator.
