Runner Recipes With Character | Chewie We’re Homemade Cookie

Nothing says “Chewie, We’re Home,” like the perfect post run snack of milk and chocolate chip cookies! Did you know you can substitute added sugar in baked good recipes with pureed fruit? This recipe calls for applesauce and chopped dates to deliver sweet flavor but with the added benefits of fruit like vitamins, minerals and fiber. After a long training run, it is time for recovery, so I replenish carbohydrate stores with these delicious cookies while sipping on protein-filled milk for muscle repair. Give this a try and your body will be feeling like the most powerful Jedi ever after your race training workout! Feeling one with the Force? Go ahead and add some blue spirulina to your milk to stay on-theme!

Chewie We’re Homemade Cookie
Ingredients
- 4 small Gogo squeeZ applesauce pouches
- 2/3 cup chopped dates
- 1/3 cup semi-sweet chocolate chips
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup oats
- ½ cup oat or whole wheat flour
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 Tablespoon canola oil
- 1 egg (or sub flax egg)
- Optional garnish: Melted chocolate and mini marshmallows
Directions
- Preheat oven to 350 degrees F. Line a baking sheet with a nonstick baking mat and set aside.
- Place all dry ingredients into a bowl and mix together.
- In a small bowl, combine the wet ingredients and whisk.
- Add wet mixture to dry mixture and mix well.
- Use a spoon to scoop out a ping-pong ball size of the mixture and roll into a small ball. Repeat until all the mixture has been used. Place each ball on a baking sheet then press to flatten with fork prongs.
- Bake cookies for 15 minutes or just until the edges are golden brown. Remove from oven and allow to cool on a wire rack before serving.
- To create the “Chewie” look, spread melted chocolate to create a holster and position mini marshmallow segments to complete his belt. Use melted chocolate to create eyes and mouth.
