A Wickedly Delicious Runner Recipe with Impossible™ Foods
These Oogie Boogie-inspired Stuffed Peppers with Impossible™ Burger are so good it’s spooky! In the spirit of the villainous 2021 Disney Wine & Dine Half Marathon Weekend, we created a wickedly delicious post-race meal to help you refuel.
In addition to refueling you after your race, these refuel the planet with every bite. Make them for a party and you’ll save the carbon dioxide equivalent of 109 miles driven in a car, the land footprint equivalent to 4 trees in the Amazon, and the water footprint of 267 gallons. Chef it up and help save the planet from becoming ghostly this spooky season!
Ingredients
Stuffed Peppers:
- 12 oz package Impossible™ Burger
- 4 eggs (1 per pepper) ** For a fully plant-based version, use flax egg replacement noted below
- 4 green peppers (tops cut off, deseeded and deveined)
- 1 cup cooked white rice (cooled)
- ¾ cup shredded monterey jack cheese (or substitute with plant- based cheese)
- ½ cup yellow onion (diced fine, sauteed until soft and cooled)
- 2 cloves garlic (minced fine and sauteed with onion until soft and cooled)
- 2 tbsp breadcrumbs (Italian for vegetarian option, panko for vegan)
- 1 tsp crushed red pepper
- 1 tsp fresh thyme (picked & chopped)
- 1 tsp fresh oregano (picked & chopped)
- 1 tsp fresh basil (picked & chopped)
- 2 tbsp grated parmesan or pecorino cheese (or substitute with plant-based cheese)
- 1 tsp salt
- ½ tsp black pepper
- ½ bunch chopped parsley
Glaze:
- ½ cup ketchup
- 1 tbsp sriracha
- ¼ cup brown sugar
- 1 tbsp apple cider vinegar
- ½ tsp black pepper
Flax Egg Replacement
- 1 tbsp ground flax seed
- 2 ½ tbsp water
Directions
- Preheat oven to 375F. Cook rice according to packaging, cool and set aside.
- Add all ingredients to a large stainless steel bowl, adding cold Impossible Burger last. Mix well and work quickly so that the mixture stays cold.
- Mix all glaze ingredients until well incorporated.
- Carve Oogie Boogie eyes and mouth into peppers.
- Place peppers in a 9”-x-13” baking dish and drizzle with oil. Spoon the Impossible Burger mixture into each pepper and brush with glaze. Cover baking dish with foil and bake approximately 35 minutes, or until peppers are tender.
- Remove peppers from oven and brush with the glaze. Top each pepper with Monterey Jack Cheese (or plant-based substitute) and put back into oven and bake for approximately 10 minutes.
- Remove from oven and top with fresh chopped parsley to garnish.
- Enjoy your wickedly delicious dinner!
Flax Egg Replacement: Mix well to incorporate and sit 5-10 minutes once mixed for best results.
